🥦 Garlic-Marinated Vegetable Stir-Fry

Imagine a sizzling hot pan where colorful vegetables embrace in a fragrant dance!

Ingredients (2–3 servings)

  • 1 carrot, thinly sliced
  • 1 red bell pepper, cut into strips
  • 1 zucchini, cut into half-moons
  • 1 small broccoli, cut into florets
  • 1 red onion, thinly sliced
  • 4–5 cloves of marinated garlic, sliced
  • 2 tbsp sesame oil or olive oil
  • 2 tbsp soy sauce (or tamari for a gluten-free version)
  • 1 tbsp rice vinegar (optional, for a tangy touch)
  • A pinch of toasted sesame seeds
  • Salt and pepper to taste

Preparation

  1. Heat the wok or skillet over medium-high heat with the oil.
  2. Add the onion and carrot, sauté for 2 minutes.
  3. Stir in the bell pepper, zucchini, and broccoli, and cook for 4–5 minutes to keep the vegetables crisp.
  4. Add the marinated garlic at the end of cooking, along with the soy sauce and rice vinegar. Toss quickly to coat the vegetables.
  5. Adjust seasoning with salt and pepper.
  6. Sprinkle with sesame seeds before serving.

  • You can add rice noodles or quinoa to make it a complete meal.
