Ingredients (2–3 servings)
- 1 carrot, thinly sliced
- 1 red bell pepper, cut into strips
- 1 zucchini, cut into half-moons
- 1 small broccoli, cut into florets
- 1 red onion, thinly sliced
- 4–5 cloves of marinated garlic, sliced
- 2 tbsp sesame oil or olive oil
- 2 tbsp soy sauce (or tamari for a gluten-free version)
- 1 tbsp rice vinegar (optional, for a tangy touch)
- A pinch of toasted sesame seeds
- Salt and pepper to taste
Preparation
- Heat the wok or skillet over medium-high heat with the oil.
- Add the onion and carrot, sauté for 2 minutes.
- Stir in the bell pepper, zucchini, and broccoli, and cook for 4–5 minutes to keep the vegetables crisp.
- Add the marinated garlic at the end of cooking, along with the soy sauce and rice vinegar. Toss quickly to coat the vegetables.
- Adjust seasoning with salt and pepper.
- Sprinkle with sesame seeds before serving.
