🥣 Ingredients

  • 1 ½ cups fresh or frozen cranberries
  • ½ cup neutral-flavored vegetable oil (e.g., canola or avocado)
  • ½ cup sugar
  • 1 ½ cups plain or vanilla yogurt
  • 2 eggs, at room temperature
  • 2 tbsp orange zest
  • 1 ½ cups all-purpose or whole wheat flour (do not mix the two)
  • 1 cup quick-cooking oats
  • 1 ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon

🍊 Optional Orange Glaze

  • 1 cup powdered sugar
  • 1 ½ tbsp orange juice (or replace part with water)
  • ½ tsp orange zest

👨🍳 Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.
  2. In a large bowl, mix yogurt, eggs, oil, sugar, and orange zest.
  3. In a separate bowl, combine flour, oats, baking soda, baking powder, and cinnamon.
  4. Add dry ingredients to wet ingredients, stirring gently until just combined.
  5. Fold in the cranberries.
